Easy Recipe For Peach Cobbler (Vegan & Gluten Free)

 

Summer time is here and that means peach cobbler should be in the oven. If you are looking for an easy recipe for peach cobbler then I have it for you. This recipe is vegan, gluten free, and takes under 25 minutes to make. Enjoy!

I can’t believe it’s the middle of June. Where has the summer gone? Actually where has this year gone? I feel like the older I get the faster the years go. Having the kids home for the remaining of the school year seemed like it went by so slow yet so fast.

I guess it’s true when they say the days are long but the years are fast. I can’t believe we are about to have a kindergartner and third grader. Ever since my oldest started school the years have absolutely flown by. Anyone else feel like that?

It makes me think about what I want my kids to remember as they grow up? Do I want them to remember how busy I was or do I want them to remember that their Mom created her own company and worked hard but also had time to be with them.

I know I want them to remember that I had flexibility to be present for them. That I could wake up early to get my work done or that I could put it away for a bit to go outside and be with my kids. I want them to remember the good meals we had around the table.

That we ate dinner on the patio during the cool spring nights and later in the evening during the summer. I want them to remember the smells of desserts cooking in the kitchen like this easy recipe for peach cobbler that I made just last week.

The house was full of kids running wild and I got this urge to make some peach cobbler. I know, strange but I just bought fresh local peaches from the store and wanted to try something new. Plus, I love trying new recipes.

I am a big believer of using what’s in my kitchen cabinets and fridge to make new recipes. I don’t like spending a ton of money on ingredients that I’ll use once and then forget about. I also don’t like recipes that call for 500 ingredients. I mean, who has time for all that? Not me!

What You’ll Need To Make This Easy Recipe For Peach Cobbler

  • Glass baking dish
  • Food processor or blender ( I love my mini food processor because it takes up little space & does a great job grinding down food)
  • Peaches (fresh and local are the best)
  • Oats
  • Pure Maple Syrup (non of that fake stuff please)
  • Mixed nuts
  • Cinnamon
  • Brown Sugar
  • Coconut Milk Whipped Cream/cool whip or dairy free ice cream. We like So Delicious coconut milk vanilla bean ice cream

Instructions

First you are going to put the mixed nuts into the food processor and mix until finely ground. Once they are ground take them out and pour into a bowl. Add in the brown sugar, oats, maple syrup, and cinnamon. Mix all together.

Cut the peaches into thin slices. Not too thin though. I like to leave the skin on for the extra nutrients. Place into a baking dish all across the bottom. Then top with the mixed nuts mixture.

Cook in the oven on 350 covered with foil for about 10 minutes. At the 10 minute mark take out and uncover. Cook uncovered for the remaining 10-15 minutes. You will cook for a total of 25 minutes.

Top with your choice of dairy free cool whip, whipped cream, or dairy free ice cream!

  • 7 peaches
  • 1 cup oats
  • 1/2 cup mixed nuts
  • 1/3 cup pure maple syrup
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Instructions

Notes

Notes: I used mixed nuts that consisted of almonds, pumpkin seeds, cashew, walnuts, and pecans. If you or your kids have constipation using pumpkin seeds is highly recommended as pumpkin seeds are high in magnesium.
Magnesium is an excellent natural stool softener and when eaten through food it is absorbed better. 
I cooked our peach cobbler for about 25 minutes. If you like your peaches to be a little firmer then I recommend cooking about 15-20 minutes. The 20-25 marker allows for the top to get a little crispy!
