Crispy Baked Veggie Wontons

I was craving wontons one day! I know, so weird but I had a craving for some crispy baked veggie wontons.

Maybe because I passed by PF Changs on the way home and it got me thinking about them.

I stopped by the store to get all the ingredients and was going to give it my best shot at making this without a recipe.

I was channeling my inner Pioneer women!

So, this recipe is simple. It can be modified to use whatever veggies you like or have on hand. My husband went crazy over these and asked me to make them again!

They are vegan (buy the kind that says “vegan” on the label) but not gluten free. If anyone knows of a vegan AND gluten free wonton brand then please let me know.

Crispy Baked Veggie Wonton Recipe:

1/2 cup black beans

1/4 cup of each of the following: diced onion, chopped baby bell sweet peppers, diced mushrooms

Ranch dressing of your choice

Drizzle of Tesse Maes Dairy Free Creamy Ranch or Chick Fil A Creamy Salsa. Found at Walmart, Harris Teeter, Whole Foods, Publix. 

A few dashes of chipotle hot sauce (can use sriracha instead if you like that better)

1 avocado

Juice from 1/2 lime

Directions:

Preheat oven according to wonton package.

Dice veggies and saute on stove for about 5 minutes. Take off stove and put in a bowl.

Mix ranch dressing and chipotle hot sauce OR Sriracha and put about 3 teaspoons into the veggie mixture. Reserve the rest for the avocado dip

Brush wonton wraps with water

Fill wontons then roll up as directed on package, place on baking pan.

Bake until golden brown, flip and bake until golden brown on both sides

Mix whole avocado, ranch dressing, hot sauce , and juice from half a lime in a food processor. Use this as a dip for the wontons.
