Crispy Baked Veggie Wontons

Crispy Baked Veggie Wontons

I was craving wontons one day! I know, so weird but I had a craving for some crispy baked veggie wontons.

Maybe because I passed by PF Changs on the way home and it got me thinking about them.

I stopped by the store to get all the ingredients. I was going to give it my best shot at making this without a recipe.

I was channeling my inner Pioneer women!

I could have pulled into PF Changs to get some take out but I didn’t want all the bloating that came along with that.

Plus, my health conscious mind couldn’t fathom the idea of eating all that sodium.

So, this recipe is simple. It can be modified to use whatever veggies you like or have on hand. My husband went crazy over these and asked me to make them again!

These are the perfect appetizer for the upcoming super bowl because they are easy to make and light. CLICK HERE to check out my five favorite easy, simple, plant fueled super bowl appetizers.

They are vegan (buy the kind that says “vegan” on the label) but not gluten free. If anyone knows of a vegan AND gluten free wonton brand then please let me know.

Crispy Baked Veggie Wonton Recipe:

1/2 cup black beans

1/4 cup diced onion

1/4 cup chopped baby bell sweet peppers

1/4 cup diced mushrooms ( I used the gourmet mix but any will work)

Ranch dressing of your choice

** Tesse Maes Dairy Free Creamy Ranch is the best because of the great flavor. Found at Walmart and Whole Foods. Sometimes found at Harris Teeter in produce section.**

A few dashes of chipotle hot sauce (can use sriracha instead if you like that better)

1 avocado

Juice from 1/2 lime

Preheat oven according to wonton package.

Dice veggies and saute on stove for about 5 minutes. Take off stove and put in a bowl.

Mix ranch dressing and chipotle hot sauce OR Sriracha and put about 3 teaspoons into the veggie mixture. Reserve the rest for the avocado dip

Brush wonton wraps with water

Fill wontons then roll up as directed on package, place on baking pan.

Bake until golden brown, flip and bake until golden brown on both sides

Mix whole avocado, ranch dressing, hot sauce , and juice from half a lime in a food processor. Use this as a dip for the wontons.

Tell me your favorite veggie appetizer!
