Roasted Baby Potatoes

Ya’ll? My kids looove these potatoes. We were making them and then my Mom started smashing them with a fork and that sent the kids over the moon so we started smashing too. We had with mahi burgers from Trader Joes (and their amazing DF/GF hamburger buns) along with my green beans that you can see here.

1 bag of colored baby potatoes (the kind that are small and round, purple and red potatoes)

2 tbsp nutritional yeast (has a salty cheesy flavor without the salt and cheese)

1 tbsp olive or coconut oil

Sea Salt and Pepper

Preheat oven to 425.

Put potatoes in their whole form in a glass bowl. Pour a small amount of water in the bowl just enough to cover the bottom. Heat in microwave for 5 minutes to get them a little soft.

Once heated in microwave. Mix in oil, pepper, and nutritional yeast with potatoes. Toss around then pour onto a baking pan. Roast in the oven for about 20-25 minutes until golden brown. Once cooked, take a fork and smash lightly on the top to get an imprint of the fork. Sprinkle with sea salt and serve. Enjoy!
