Dairy Free/Gluten Free Granola

2 cup oats (I used organic and gluten free)

½ cup pumpkin seeds (ground in food processor)

½ cup honey

1 tsp pure vanilla extract

2 tbsp ground flax

1 tbsp hemp seeds

½ cup walnuts chopped

¼ coconut oil

1 cup dairy free chocolate chips

Mix all ingredients into a bowl then place into a greased brownie pan (I rubbed down with coconut oil). Wet hands and press down granola into brownie pan. Bake on 325 for about 20-25 minutes. Depending on your oven, you may only cook closer to 18-20 minutes. Take out of oven and break apart. Place in a zip loc bag or glass covered dish to store. Great for a snack or over dairy free yogurt for a yogurt parfait.
