Delicious & Easy Three Bean Taco Soup Recipe

This three bean taco soup recipe is easy and can be made on the stove in under 30 minutes or in the crockpot for a busy day! Minimal ingredients and low in cost to make! Definitely a must try for every family.

Three Bean Taco Soup Recipe (Vegan and gluten free)

I’m all about making this easy taco soup recipe made with beans. You can make on the stove top or in the crockpot! Now that it’s officially Fall soup will be on the weekly menu. 

Living in the south and on the coast makes for one hot summer and especially a hot August! By the end of August I’m so ready for some cooler temps. Last weekend was the coolest weather we’ve had so far and I woke up wanting to make my taco soup recipe!

What’s better than some warm soup or chili and being able to have an outside fire? ahh Fall is in the air!

I told my husband I was craving some soup and wanted to whip up a batch real quick. I told him “I am going to make my new three bean taco soup recipe (vegan and gluten free) that will blow your mind.”

 I went to the store, got all of my ingredients, and whipped up the best vegan and gluten free batch of three bean taco soup ever! 

He ended up loving it and a couple nights later we had chili cheese nachos with the left over taco bean soup. I call it a soup but it’s kinda like a chili. The nachos were delish and I love when I can make one meal but get two meals out of it. 

Taco Soup Recipe Ingredients Used for Nachos

For the nachos I used organic corn tortilla chips and  So Delicious Brand Cheddar cheese. 

This is by far my most favorite dairy free cheese and pretty much the only one my kids love because of it’s mild flavor and  it’s not too creamy. For a grilled cheese sammy my kids love the Daiya American Slices. Target now carries the So Delicious and Daiya brands. 

We used the corn tortilla chips but you can use any tortilla chips you like. Tortilla scoops work great too. They are like the most perfect little cup to hold the nacho toppings. Kids really like those! 

We added shredded lettuce, tomatoes, dairy free sour cream (mix 1 container DF or greek plain yogurt with 1 tbsp white vinegar and mix), diced avocados, and hot sauce on top of them.

Taco Soup Recipe Ingredients:

2 cans of diced organic fire roasted tomatoes

1/4 cup onion chopped

1/2 cup chopped baby bell peppers (I buy the bag of baby sweet bell peppers)

1 can of organic black beans (with liquid)

2 cans of organic kidney beans (with liquid)

1 package of steamed lentils ( I buy from Trader Joes, Target, or you can use fresh (which need to be soaked first), or you can use canned organic. )

2 tbsp chili powder

2 tbsp cumin

1/2 tsp smoked paprika

1 tbsp garlic powder

1/2 tbsp onion powder

Taco Soup Recipe Instructions

Cut onions and peppers and place in crockpot. Then place tomatoes, beans, and seasoning in the crockpot. 

Mix all together and let cook on low for 6-8 hours. Once warm you can taste and if you need to adjust seasoning you can add in more then.

If you are cooking on the stove top then get out a large pot. Go ahead and saute your onions and peppers first. 

Then you will want to add the spices, tomatoes, and beans. Cook on low to med heat until hot. If you are in a hurry then cook on med-high heat until thoroughly heated.

Top with your favorite toppings and enjoy! We like to top with shredded DF cheese, DF sour cream, and crushed up tortilla chips! Oh, and a little hot sauce or sriracha! Yummy. 

Feel free to serve with corn bread too! 

Notes

Feel free to use any beans you have on hand. You can use black beans, dark and light kidney beans, northern beans, pinto beans, lentils, black eyed peas, and chickpeas. I love to use chickpeas in soups! 

You can also use dried beans. Just remember you will have to soak them over night OR you can boil them hard for about 20-30 minutes before cooking. 

Also, feel free to use frozen peppers and onions instead of fresh. 

You can add corn and other veggies to this taco soup recipe too. Even quinoa would be good in it for a little extra plant punch!
