The Best Mini Egg Muffins

Mini egg muffins (2 recipes)

I love to make mini anything and especially for breakfast. Here are two of the best mini egg muffins that are the perfect lil breakfast or snack. They are packed with great protein, veggies, and fiber. Fiber is important because it is what keeps you full and your blood sugars balanced. A perfect addition to a kid’s plate.

I have found that kids love smaller portions and especially picky eaters. Larger portions of new foods can be overwhelming for them.

So when you are thinking about introducing a new food or want to appeal to the lil ones then think small. Bigger is not always better.

Mini Egg Muffins recipe

Preheat oven to 425

4 organic eggs

2 cups cooked and finely chopped broccoli ( I steamed the broccoli)

1 cup dairy free cheese ( I use either So Delicious Brand shredded cheese or Follow your Heart Brand).

For this recipe I used Follow Your Heart Brand shredded cheddar cheese. Dairy Free cheese is found in the produce section.

2 tbsp ground flax and/or chia (if just trying out for a picky eater you may want to gradually build up to this. Maybe a pinch to start out with)

Sea Salt and Pepper

Mix all ingredients together in a mixing bowl. Pour into greased mini muffin pan and cook on 425 until golden bubbly.

Another recipe for egg muffins is called “Confetti” muffins. I chop one small baby bell red and yellow pepper into fine pieces. Then finely chop 1 cup mushrooms.

Place in microwave to steam and then mix into egg mixture. You can add pesto, feta cheese, or nutritional yeast to this veggie recipe and cook until golden bubbly. Nutritional yeast is a great substitute for cheese. Does it taste exactly like cheese? No, but it does add a nice cheesy, salty flavor without the cheese or salt.

It’s a great source of B vitamins. We put it in our mashed potatoes, baked potatoes, dip veggies in it, and it is AMAZING on popcorn. I get mine from Whole Foods or Amazon. HERE is the link for finding it on Amazon.
