This broccoli salad is a twist on the kind you can find at a restaurant or on a salad bar that usually consists of cheese, mayo, and bacon. This is a cleaner version with ingredients you most likely already have on hand. This is best if it sits for a little bit and even better if it sits over night.
1/2 to 1 head of chopped broccoli
1/4 cup raisins
4 radishes sliced thin
1/2 cup chopped grape tomatoes
1/2 tbsp finely chopped shallot
Slivered almonds (optional)
1 container unsweetened plain coconut milk yogurt
1 tbsp Apple cider vinegar
1 tsp of either Annie’s goddess dressing or Dijon mustard
Dash of sea salt and pepper
About 1/4 cup pure maple syrup (could use a little less if you wanted)
Mix all ingredients in a bowl. Chill for at least one hour. Best when able to sit for awhile in the refrigerator.
