Taco Soup

Tomato Soup

1 can each of the following organic beans (if you use fresh then you need to soak them overnight):
Black beans
Navy beans
Pinto beans
Dark and/or light kidney beans
1 cup organic corn
1.5 cups frozen onions/peppers ( use fresh if you want to)
Two cans of organic diced tomatoes with green chilis
Taco seasoning ( dash of chipotle hot sauce, 1 tbsp each of: garlic powder, pepper, cumin, and chili powder)

Pour all ingredients in a pot or crockpot. Cook on Med high on stove or in crockpot for 6-8 hours.

Top with sliced green onions, blue corn organic tortilla chips (crumbled), diced tomatoes, and chipotle sour cream. Recipe below:

Chipotle sour cream: Plain dairy free or Greek yogurt with 1 tsp chopped cilantro and 1-2 tsp chipotle hot sauce. Stir and place a spoonful on top. Crush blue corn tortillas on top too.
